Savoury French Toast (Blood Sugar Friendly)

Sweet French toast can be quite high in added sugar and may not be the best option when managing blood sugar imbalances. Try this low-sugar savoury French toast for a blood-sugar-friendly alternative.

Nutritional Highlights

Vitamin D works closely with calcium and phosphorus to maintain bone health. Low vitamin D is associated with a higher risk of prediabetes. Per serving, this meal provides 4 mcg or 40% of the daily recommended nutrient intake (RNI).

Zinc helps wounds heal, strengthens immunity and helps the body to make DNA, the genetic material in cells. People with type 2 diabetes often have low zinc levels, and some research suggests that it may help to lower blood sugar and cholesterol levels. This meal provides 2mg or 28.7% of the daily RNI of zinc per serving.

Potassium – works closely with sodium and chloride to maintain acid balance, electrical charge and blood pressure. A low-potassium diet is associated with high blood pressure.  Per serving, this meal provides 456 mg or 13% of the daily RNI of potassium.

Savoury French Toast

Prep time: 5 mins | Cook time: 4 mins | Serves 1

Ingredients

1 slice of seeded wholemeal toast

2 large eggs

Pinch black pepper

Pinch garlic powder

1 teaspoon grated parmesan

2 teaspoons chopped parsley

¼ small avocado, sliced

1 teaspoon olive oil

Directions

Whisk eggs, parmesan, garlic powder, parsley and black pepper in a large, shallow bowl. Soak both sides of the bread in the egg mixture.

Heat olive oil in a non-stick frying pan and swirl until the oil evenly coats the pan. Transfer the bread and egg mixture to the pan and fry for two to three minutes on each side until golden. Transfer to a serving plate, then top with avocado and garnish with extra parsley and black pepper. Enjoy.
