Try this low-sugar savoury French toast for a blood sugar-friendly alternative.



  • 1 slice seeded wholemeal toast
  • 2 large eggs
  • Pinch black pepper
  • Pinch garlic powder
  • 1 teaspoon grated parmesan
  • 2 teaspoons chopped parsley
  • ΒΌ small avocado, sliced
  • 1 teaspoon olive oil


Whisk eggs, parmesan, garlic powder, parsley and black pepper in a large, shallow bowl. Soak both sides of the bread in the egg mixture.

Heat olive oil in a non-stick frying pan and swirl until the oil evenly coats the pan. Transfer the bread and egg mixture to the pan and fry for two to three minutes on each side until golden. Transfer to a serving plate, top with avocado, and garnish with extra parsley and black pepper. Enjoy.
