Chipotle Borlotti Beans with Sweet Chilli Salmon & Side Salad

It doesn’t getter better than my chipotle borlotti beans with sweet chilli salmon for lunch. Deliciousness and quality nutrition – guaranteed!

It is with a joyful heart that I announce that I am officially back to my happy place with beans! Wise-sayings sound so good when you say them, but you don’t truly appreciate them until you’ve been through and conquered a bad situation. Never underestimate the saying ‘health is wealth’. I genuinely believe that you are nothing without health.

Eating an entirely plant-based diet was a huge learning curve. Before I started experiencing negative side-effects, I truly believed that I was eating the best diet for me. Now that I am on the other side, I see how wrong I was. My first year was fantastic, but honestly, every day after that was not. I don’t want to revisit my past in this post; I just want to relish in the knowledge that I can enjoy all the foods that I thought I was never going to be able to eat again because I had wrecked my gut.

I hated the word ‘moderation’, but can I tell you now that I appreciate that word a little more every single day? It makes sense now, more than ever, why I need to eat a reasonable amount of plants and a moderate amount of animal products to be at my healthiest.

I can’t say my diet is going to work for you, but what I would like you to do is this: keep an open mind! It may be a good idea to try different things, but never be afraid to change your approach if it stops working for you. That is, of course, if optimum health is at the core of your dietary goals. Also, remember that optimum health does not equal perfect health. Perfect health does NOT exist. Don’t waste your time chasing it.

This chipotle borlotti beans is perfect on its own or with a side of non-starchy veggies. I don’t recommend eating beans with cruciferous vegetables like broccoli or cauliflower because they can be too hard on your gut. The recipe for this meal is pretty straightforward. I used my shortcut recipe for this. It comes in quite handy when I don’t have time to cook everything from scratch, but still crave a tasty meal. Yep, I totally eat my cake and have it! Haha

Chipotle Borlotti Beans with Sweet Chilli Salmon & Side Salad

Description

Nourishing chipotle borlotti beans with sweet chilli salmon. Perfect for lunch or dinner, the choice is entirely yours!


Ingredients

Scale
  • 400g tin borlotti beans, thoroughly rinsed and drained
  • 150g pasta sauce with chilli (no added sugar)
  • 1 teaspoon chipotle chilli paste
  • 1 medium piece fresh salmon
  • 1 teaspoon sweet chilli sauce
  • 2 tablespoons freshly chopped parsley
  • 1 teaspoon chilli flakes
  • Large handful of baby leaf salad, to serve

Instructions

Coat the salmon with the sweet chilli sauce, a pinch of salt and half of the chilli flakes. Leave to marinate in the fridge for at least 20 minutes then place on lined baking tray and bake in oven for 20 minutes at 200C.

In the mean time, heat a small splash of water in a medium saucepan of medium heat. Once warm, add the pasta sauce and chipotle chilli paste. Cook for 3 minutes on medium heat then tip in the beans. Stir well then cook on a simmer for 10 minutes. You shouldn’t need to add any seasoning, but taste and adjust the seasoning if needed.

Take the pan off the heat then serve the borlotti beans alongside the salmon and baby leaf salad. You can dress the salad with olive oil, lemon juice, black pepper and a pinch of salt if you wish. As always, enjoy!


Notes

Enjoy the beans on toast or with a side of grains or potatoes. You can replace salmon with another protein of y0ur choice or leave it completely.
